Vegetarian Shiro Wat (Ethiopia)


There is something warm and absolutely beautiful about this vegan stew from Ethiopia. Shiro Wat is made from shiro (chickpea) flour and is just perfect for almost any occassion! Here is a very simple version of a classic Ethiopian dish!


Ingredients:

- 1 cup shiro flour (chickpea flour)

- 2 tablespoons olive oil

- 1 large onion, finely chopped

- 3 cloves garlic, minced

- 1 tablespoon berbere spice mix

- 2 cups water or vegetable broth

- Salt to taste

- Fresh cilantro for garnish (optional)


Instructions:

1. Sauté Onions and Garlic: Heat olive oil in a large saucepan over medium heat. Add the chopped onion and cook until soft and translucent. Add the minced garlic and sauté for another minute.

2. Add Shiro Flour and Spices: Stir in the shiro flour and berbere spice mix. Cook for 2-3 minutes, stirring constantly to prevent the flour from burning.

3. Add Water or Broth: Slowly add the water or vegetable broth while continuously stirring to avoid lumps.

4. Simmer: Reduce the heat to low and let the mixture simmer for about 20 minutes, or until it thickens to your desired consistency. Stir occasionally.

5. Season: Add salt to taste.

6. Garnish and Serve: Garnish with fresh cilantro if desired. Serve hot with injera or rice.
