I made this for my wife earlier this year and she tried to marry me again right there on the spot!!...lol. Trust me, this is a winning recipe, not only for the taste but also for the presentation. Here's the recipe for you:
Ingredients:
1. Bread slices (preferably thick-cut like brioche or challah) - 4 slices
2. Eggs - 2
3. Milk - ½ cup
4. Vanilla extract - 1 tsp
5. Ground cinnamon - ½ tsp
6. Butter for frying
7. For the sweet buttercream:
- Unsalted butter (softened) - ½ cup
- Powdered sugar - 1½ cups
- Vanilla extract - 1 tsp
- Milk - 1-2 tbsp (as needed for consistency)
8. Fresh blueberries - 1 cup
9. Powdered sugar for dusting
Instructions:
1. Prepare the buttercream:
- Beat the softened butter until creamy.
- Gradually add powdered sugar, vanilla extract, and milk. Beat until smooth and spreadable.
2. Prepare the French toast:
- In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
- Dip each bread slice into the egg mixture, ensuring both sides are coated.
3. Cook the French toast:
- Heat butter in a pan over medium heat.
- Cook each bread slice for 2-3 minutes per side or until golden brown.
4. Assemble:
- Spread a generous layer of buttercream on one slice of the French toast.
- Sprinkle a handful of blueberries over the buttercream.
- Top with another slice of French toast. Press gently.
-If you really want to get fancy, get a pastry injector and inject the buttercream into the crispy french toast right before service!!
5. Serve:
- Cut into halves or quarters.
- Dust with powdered sugar and garnish with more blueberries.
