2. 1 cup all-purpose flour
3. 1/2 cup sugar
4. 1/2 cup unsalted butter, softened
5. 1 egg, beaten
6. 1/2 teaspoon baking powder
7. 1/4 teaspoon salt (omit if using salted peanuts)
8. 1 teaspoon vanilla extract
Directions
1. **Peanut Preparation:** If your peanuts aren't roasted, start by roasting them. Preheat your oven to 350°F (175°C). Spread the peanuts on a baking sheet and roast for about 10-15 minutes or until they're golden brown. Make sure to stir or shake them a few times to ensure even roasting. Allow them to cool.
2. Once cooled, pulse the roasted peanuts in a food processor until finely ground. Some people like to keep a few larger peanut pieces for an extra crunch.
Either way, be careful not to over-process them into peanut butter.
3. In a mixing bowl, cream together the butter and sugar until the mixture is light and fluffy.
4. Gradually add the beaten egg and vanilla extract to the butter-sugar mixture and continue mixing until well combined.
5. In a separate bowl, whisk together the flour, baking powder, and salt.
6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
