Holiday Muffin Alert!! Cranberry, Orange and Walnut!!


There's something about the Christmas season that makes me want to bake and sing. Being in the kitchen on a cold December morning, while the kids are playing upstairs, and my wife is reading is such a beautiful thought to me. And, with beautiful thoughts, come beautiful, recipes!! Here's a delicious recipe for Cranberry Orange and Walnut Muffins for you to share with your family this holiday season.


Ingredients:

- 2 cups all-purpose flour

- 1/2 cup sugar

- 1 tablespoon baking powder

- 1/2 teaspoon salt

- 1/2 cup unsalted butter, melted

- 3/4 cup orange juice

- 2 large eggs

- 1 tablespoon orange zest

- 1 cup cranberries (fresh or frozen)

- 1/2 cup chopped walnuts


Instructions:

1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease with butter or cooking spray.

2. In a large bowl, mix together flour, sugar, baking powder, and salt.

3. In another bowl, whisk together the melted butter, orange juice, eggs, and orange zest.

4. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.

5. Gently fold in the cranberries and chopped walnuts.

6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
