Delicious in the Diaspora - Healthy Veggie of the Day, Spinach



Here is a great idea for fresh spinach! Take a fresh ripe avocado and remove the large seed in the center. Next mash the meat of the avocado up with a 1/2 teaspoon of sea salt, 1/4 teaspoon of smoked paprika, 1 ounce of lime juice, 1/2 tablespoon each red onion, cilantro, minced garlic and minced ginger! Mash and mix this up to be a smooth or chunky as you like and then spread it over a nice thick piece of your favorite toast - we like whole grain or sourdough! Finally, add a few beautiful leaves of spinach on top. Be sure that they are wash and healthy looking.


You could also mince up some of the leaves and add them to the original mash up that gets spread onto the toast!
